I visited T.G.I. Fridays this week and enjoyed one of the best meals I have ever eaten. I ordered their Parmesan-Crusted Chicken. The parmesan crusted chicken is a sautéed chicken breast basted with Caesar dressing, then coated with a Parmesan-crust topping. The chicken melted in my mouth and the flavor was scrumptious. It was served with a three-cheese tortelloni tossed in spinach Alfredo sauce and a side of tomato Mozzarella salad. Both were outstanding. The tortelloni was excellent; I’ve never tasted an Alfredo sauce like this. I don’t usually like Alfredo sauce, but this was very good. If you have never eaten a tomato Mozzarella salad, you need to. I found a recipe for this salad a few years ago and loved it ever since. I was excited to see that a restaurant was serving it. It is a mixture of Mozzarella balls, cherry tomatoes, and red onions mixed with a vinaigrette.

I always enjoy going to T.G.I. Fridays, and their pricing is reasonable. You can now get a three-course meal for $12.99, which includes an appetizer, an entree´, and a dessert. You can’t beat prices like this.

So if you don’t feel like cooking tonight or you are in the mood for something different, then head out to T.G.I. Fridays and enjoy a great meal at a low cost.

Happy dining!

Michael and I visited Olive Garden on Sunday to celebrate our one year anniversary. As always, the food was delicious. I had to try their new drink Berry Aqua Fresca. This was one of the tastiest drinks I have ever had. It is a combination of Fresca and different fruit juices (blackberry, blueberry, and strawberry). The drink is filled with sweet strawberry chunks and plump blueberries. You have to try this drink on your next visit to Olive Garden. Very refreshing.

I have recently discovered the most amazing baking mix that a cook could ask for. After the first use, I simply wanted to hug the people that make this fabulous product. I love to cook, I love new recipes, but most of all I love products that make cooking easier and quicker without sacrificing the homemade taste. You probably want me to hurry and spill the beans on the name, am I right? So here goes, Pioneer® Brand Buttermilk Biscuit and Baking Mix.

I was searching the web for a biscuit recipe that tasted like those served at Dixie Stampede. My husband absolutely loves those biscuits. I finally found the recipe at GroupRecipes.com, which excited me. I made the biscuits the very night that I found the baking mix (at Wal Mart, by the way) and they were marvelous. I think my husband fell in love with me all over again when he bit into that first biscuit. He ate five biscuits that night with his meal, and he has told everyone about them.

Now, back to the baking mix. I have also made breakfast biscuits with this mix. They turned out to be the best biscuits I have ever made. They were so light and fluffy and tasted so good. Just from reading the package it seems to be a healthy product. Remember, I love cooking, but, more importantly, eating healthy. I there is no cholesterol in this product. The baking mix only contains 1 gram of sugar per ¼ cup, and it has 3 grams of protein per ¼ cup. It is packaged in a nice container that provides easy storage and usage. A 40 oz. container cost around $2.52. I’ve already made three sets of biscuits (equaling 20 biscuits) and a strawberry cobbler with my first container; and I still have at least ¼ of the container left. So this baking mix goes a long way. Visit the Pioneer® Brand website to find recipes and product information at http://www.pioneermills.com/.

You can find the recipe for the Stampede biscuits at: http://www.grouprecipes.com/20014/dolly-partons-dixie-stampede-garlic-cheese-biscuits.html

Hope you enjoy.

A few years ago I developed GERD, better known as Acid Reflux Disease. Anyone who lives with this condition knows that you must control your diet and be careful of foods containing acid. Eating too many foods containing acid can cause your symptoms to get worse. So, I was in a dilemma, because I love orange juice and enjoyed a cup every day. After all, vitamin C is very beneficial to your body. One day while I was grocery shopping, I noticed a carton of orange juice that was labeled low acid. I thought for sure that it couldn’t be real orange juice, but I decided it would be worth a try. I loved it and I went back to enjoying a cup of O.J. with my breakfast every morning.

Minute Maid® Low Acid Orange Juice goes above the call of duty by providing vitamin C, folate and potassium.  It is a smoother and milder tasting juice that is bursting with flavor.  It is available in frozen or in the refrigerated section.

I raise my cup to Minute Maid®. Enjoy!

As I grew older, I began making a commitment to eat healthier meals. The first place I started was breakfast. After all, breakfast is the most important meal of the day.  I know some of you do not believe that breakfast is important, and you think you are just fine without eating a good breakfast; but in reality, you are not. Breakfast helps provide the body with enough energy to start the day. It also helps stabilize metabolism, mood and energy levels. You may not realize it, but you are doing yourself a great injustice by not eating a healthy breakfast.

Healthy cereals are a great way to enjoy a quick breakfast. One that I highly recommend is Total® Cranberry Almond Crunch. It contains lightly sweetened whole wheat flakes, crunchy oat clusters, and real chewy cranberries that are full of flavor. It has an incredible taste. But, the best part, you get 100% of the Daily Value of 11 important vitamins and minerals that help support your body throughout the day. It has only 190 calories (more when you add milk) and only 15 of those calories are from fat. And it only has 1.5 grams of fat, with .5 grams being polyunsaturated fat grams. By the way, polyunsaturated fats are thought to help lower your blood cholesterol. So why not choose a cereal that will help you start your day in a healthy way. Total® Cranberry Almond Crunch has everything to offer with its great taste, excellent nutritional value, and inexpensive price (15 oz box usually sells for about $2.82).

I hope you decide to commit to a healthier and happier you, and why not start with a healthy breakfast.
